Decoction

Decoction is a traditional brewing technique in which a portion of the mash (the mixture of crushed grain and hot water) is removed, heated to a boil, and then returned to the main mash. This process can help develop deeper malt flavors, improve mash chemistry, and create the rich, complex character associated with many traditional European beers.
